After graduation Tim heads west to Montana living a mountain-man
life, furthering his knowledge in kitchens at a favored local dive bar.
Adventures took him across the country to well-regarded eateries in Louisville, Seattle and Indianapolis before landing in Fort Collins!
Tim begins the year at the popular Jax Fish House, where he established his strong natural understanding of flavor composition.
With his knowledge of running a food truck, Tim opened The Tramp About food truck earning him coveted weekly spots at Odell, New Belgium and of course WeldWerks!
When the pandemic hit, we jumped at the opportunity to bring in Tim as the brewery’s Head Chef to cook up intentionally crafted cuisines!
